We’ve been warned about our poor state of our soils since the 1930’s when Document 264 was presented to the Senate. The document had been requested by the Senate to look into the state of minerals in our foods and provided evidence of the mineral deficient state of the soils in America. In more recent years, the official report of the 1992 Rio Earth Summit showed that over the last 100 years, average mineral levels in agricultural soils had fallen worldwide by 72% in Europe,
76% in Asia and 85% in North America. As a result the large majority of us are extremely deficient in a number of key nutrients that are critical to our wellbeing.
Luckily, there there are some producers out there who have a passion for what they do and will not in anyway compromise their beliefs. Just to clarify here, because the term “green” gets tossed around quite a bit nowadays, when we refer to food, skin care and clothing as “Green”, we mean that they were made with the highest quality organic and gmo-free ingredients. When we refer to durable giftware items as “Green”, we mean exquisite items that were made in a sustainable way ie. using recycled or upcycled materials, that were fair traded or hand crafted.
Our foundational belief is that green can not only be as luxurious, stylish and indulgent as conventional products, but is also superior because of the additional attention that goes into making sure that these products cause no harm to our health or to the health of our planet.
One of our goals at Fresh Unlimited is to raise awareness about the increasing number of high quality green alternatives that are available to consumers. This category will feature premium quality ingredients that not only provide rich and intoxicating flavors, but also a high level of nutrients, which unfortunately are sorely lacking in much of the conventional foods that are available to us today.
The love of good food is one that we all share across the globe but there is a prevailing belief that decadent foods can’t also be good for us. Now, this may be true if we are talking about conventional foods that are grown in dead soils, laden with toxic chemical residues from pesticides and herbicides and then supplemented with chemical and synthetic additives intended to increase their shelf life and add flavors so that food manufactures can meet their desired profit margins. But if we look to foods that were grown in nutrient rich soils without pesticides and herbicides, as most superfoods are, and were then processed without chemical and synthetic additives, it becomes entirely possible to indulge in decadent and more flavorful foods that are also good for us.
The best of both worlds is possible: eating well, exploring and enjoying new and favorite flavors all while consuming the health enhancing nutrients our bodies so desperately crave. It’s been confirmed, George Clooney and Brad Pitt will be among the list of celebrities attending this year’s Toronto International Film Festival. I wonder if they decided to take part to get an invite to Norman Jewison’s annual TIFF BBQ and auction so they can bid on our Fresh Unlimited green celebration package. Both are, after all, known to lean towards the green side, George Clooney with his electric Tesla Roadster and Brad Pitt’s involvement with environmental architecture and design. Our green gift would be an excellent souvenir of their TIFF experience and, all funds raised help out the Canadian Film Center in promoting Canadian film talent. What better incentive for any film maker!
Regardless of whether or not they’re able to make it to the auction, we look forward to their film screenings. George Clooney has two films showing at TIFF, the North American premier of The Ides of March and the world premier of The Descendants, while Brad Pitt’s Moneyball will be making its world premier here.

If you‘re a coffee lover, then this is for you (unless you love your coffee black, of course). I’ve been searching for a non-dairy creamer for a while now, one that would make my coffee taste as decadent as the half and half cream I’d become accustomed to using. I tried almond milk, rice milk and even hemp milk but all of them were just too watery and added absolutely no decadence to my coffee at all.
I finally figured it out and here is the recipe below. I realized that what likely made the cream so good was its fat content and so I decided to try blending coconut oil into the almond milk. A couple of little tweaks later and voila! Perfection! This creamer is so good, I often find myself having an extra cup of coffee… but the ingredients in the creamer are super nutritious so I’m hoping that makes up for the extra coffee 😉

This recipe is the first in an upcoming series of recipes that demonstrate that you can indulge in decadent foods while at the same time getting some life enhancing nutrients from them. This particular recipe includes mostly raw ingredients except for the roasted almonds, but if you prefer all raw then leave the almonds unroasted. I really like the flavor that the roasted almonds give though and you still get the nutrients from the raw almonds. I tested this recipe on some very picky eaters without letting them know of the health benefits and it got some great reviews! Try it out and see! The recipe is below if you’d like to print it out. WORLD’S BEST CHOCOLATE ALMOND BROWNIE FUDGE
½ cup raw organic almonds
½ cup roasted organic almonds
1/4 cup roasted organic almonds (optional)
3/4 cup raw organic cacao powder
1 tbsp organic goji berry powder
1 ½ tbsp organic maca
1 ½ tsp organic vanilla bean
½ tsp sea salt or himalayan salt
3 tbsp organic cacao nibs (optional)
1/4 cup organic agave
½ cup organic coconut oil
1) Roast the 3/4 cup almonds then take ½ cup and powder it either in a coffee grinder or food processor. Take the remaining 1/4 cup roasted almonds and chop them into small pieces.
2) Melt the coconut oil. Put the 1/4 cup of coconut oil in a jar and place in a bowl filled with hot water until it is melted.
3) Take the ½ cup of raw almonds and powder them either in a coffee grinder or a food processor.
4) Mix together: the powdered raw almonds, the powdered roasted almonds, the goji berry powder, the maca powder, the ground vanilla beans, the salt and the cacao powder (you can use cocoa powder but you just won’t get all of the nutrients you get from the raw cacao powder). Then put through a sifter. (Sifting is not absolutely necessary but it creates a finer consistency.)
5) Add in the agave and the coconut oil and mix well.
6) Add in the 1/4 cup roasted and chopped almonds and the cacao nibs and mix
7) Pour into a 6 x 8 pan and refrigerate for 1 hour
8) Cut into squares and store in the freezer
